Besan FlourBesan Flour
Made by grinding chikpeas into a flour. Also known as Gram flour. Organic flour is milled from pesticide-free grain and grown in soil only fertilized by natural substances. The flour is not artificially processed or chemically ripened.
Benefit : higher in fibre and lower in calorie than refined wheat flour. It is also a good source of protein.

Emmer Wheat FlourEmmer Wheat Flour
Emmer wheat flour has a high fibre content which helps regulate intestinal transit and preserve the ability to absorb water. The significant fibre content makes this flour especially suitable if you are on a diet because the fibre swells in your stomach, making you feel full more quickly and helping you to eat less. Moreover, since it is rich in vitamins, mineral salts and proteins, emmer wheat flour has a very high nutritional value, but a lower calorie count compared to refined flour, due to a lower concentration of starch. Its high protein and mineral salt content, especially iron, has a positive effect from a physiological and dietary point of view.
Jowar FlourJowar Flour
Jowar or sorghum is a hardy crop. The grains are often boiled or steamed and used in making porridge and soups, or milled into flour, which are then used in making a number of preparations. Unlike wheat flour, it lacks elasticity and hence is gluten free.
Premium Whole wheat AttaPremium Whole wheat Atta
Healthy Buddha atta is made from whole wheat flour (including the husk) with no additives. This makes the atta coarser than the regular branded atta available in the market. It is an indication that the flour is not refined and still retains its natural nutritive value.
Usage: Since this is whole wheat, the water required fro kneading is slightly on the higher side. Suggestive water ratio is appx. 600-700 ml per KG of atta. You can also mix a small portion of regular cooking oil or ghee to it. After kneading, let the dough rest (ideally covered in a moist muslin cloth) for 40-50 mins before making chapatis.

Rice flour is a particularly good substitute for wheat flour, which causes irritation in the digestive systems of those who are gluten-intolerant.
Ingredients: Long Duration Organic Raw Rice Grinded to Flour
Storage: When properly stored, in a tightly covered container in a cool dry location, white rice flour may last indefinitely. Shelf Life: 6 months to one year in the freezer if stored in tightly sealed plastic containers or if tightly wrapped. It will keep for only a few months if stored in a cabinet.
Usage: Rice flour acts as a healthy thickening agent in few refrigerated recipes, it gives the dishes smooth consistency. Rice flour is gluten free and a fine substitute for wheat flour. It is used to make sweets and rice noodles and also has an extensive use in baby food products.
